Sauder’s Eggs claims that the extra egg yolk can sometimes add extra fat, altering any recipe that originally intended only one yolk to be present. This, of course, only refers to extremely precise recipes.

Well, chickens, obviously! But more specifically, they come from young chickens. “When [a hen] is laying her first eggs, her body is finding out,” said Dan Arnsperger, CEO of Happy Egg Co. “Sometimes she releases two eggs very quickly and a shell forms around them.”
Many farmers also use artificial light to control the amount of “daylight”. This helps regulate egg production and allows the hens to lay eggs all year round. When a hen reaches five months of age, her body is mature enough to start laying eggs. The amount of “daylight” the chickens are exposed to is gradually increased over several weeks from 8 hours to 16 hours to mimic the summer season.
As day length gradually increases, most hens lay single-yolk eggs. But “if the day length increases too sharply, then an abnormally high percentage of eggs from young hens will have double yolks,” Bart Slaugh, director of Quality Assurance at Eggland’s Best, told me. “If the chickens are raised indoors with controlled light and then moved to a pen where they have access to natural light, especially at this time of the year with the longest days, it will be the ideal situation to produce many double yolks. ” However, ovulation will normalize after a while and the hen should return to laying single-yolk eggs.
If you buy a brand of eggs, especially from the same batch, they may come from a farmer. If all those chickens are young, or if that farmer has abruptly changed the exposure to light, then some double yolks could fall out and get into the cartons you bought.

If you’re especially lucky in the egg yolk department, you’re not alone. In addition to the staff, a woman in Liverpool, England, bought a carton of half a dozen eggs from Aldi that were all double yolks in July.
“If egg consumption is growing, which it did during the pandemic, then you need more birds,” Arnsperger said. “And so you’ll have a disproportionate wave of young birds.” This can lead to more double yolks (remember, younger chickens lay more double yolks).
But due to increased demand during the pandemic, there may be another reason why you have a lot of duplicate gems. Most of the time, double-yolk eggs are graded by an egg grader because of their size, Arnsperger told me. “It will remove the size of the egg you don’t want,” he continued. “But if you don’t run out of eggs, like during the pandemic, companies will expand the sorter’s tolerance to include larger eggs that may have double yolks.”
